How often does one have to oil a carbon steel knife?
i'm wondering how often one has to be oiling there carbon steel knife in order to keep it from getting all rusted and ugly, also what type of oil is best for those kind of knives? if they are going to be used in a wet environment.
I have stored carbon knives over long periods of time. I used a small amount of mineral oil, and never had a problem. Mineral oil is taseless, and can be ingested. I know some people who suggest Pam. Its mostly veg oil. The premese is the same; its food grade oil. If you use WD-40 or the like, clean the blade before you use it on food; you can get a tummy ache. If you get it wet, wipe it, nothing else to do.

Difference between stainless and carbon steel scalpel blades?
I'm referring to surgical scalpels. I couldn't find any information relating scalpels, but on swords, knives, etc. people have said carbon is better and tend to not chip and can keep an edge longer. However, Stainless Steel blades cost more than carbon. Why is this? Which is better?
Depends on who and what are you operating on?
Disposable blades are most commonly used to ensure a sharp blade everytime and they stopped using carbon steel ones years ago for infection control and cost reasons.

How do I get a mirror finish on a knife blade, 1050 carbon, Samuri? Not a cheap sword.?
I just want it to look good, it already has A VERY good edge on it.
I want to do it safely, too.
Do you have a bench grinder? If so put a buffing wheel on it and get some jewlers rouge and polish away> It will get as shiny as you want it to.

High Carbon Steel Knife vs. Stainless Steel Knife?
Which one and why?
Ditto with Patrick... there are certain "superalloys" (space age stuff, of which changes nomenclature upon a weekly basis) that could be considered "stainless", and possess working properties that would send most other suitable blade steels running for cover.
Admittedly, in all reality, I work with high carbon steels... it would seem that a well treated blade made from 01 cuts better than any stainless I've seen. A good billet of 5160 is also much tougher and has better edge retention than any stainless I have seen either.
It all depends though. If you get a high carbon steel blade of superb quality, and a stainless blade of superb material quality/manufacture, it comes down to what you're going to use it for. If you intend to maintain your knives, then carbon standards are for you... if it's going to be a general use pocketknife you really just don't care about and will probably neglect: go stainless.
In the meantime, I'll stick with 01, 1095, W1, W2, L6, 52100, and 5160.
