When a recipe says....?
When a recipe says "flatten chicken breasts to 1/2" thickness" does that mean to somehow smash it to be 1/2 thick, or use a knife to fillet it to that thickness?? I've never seen this in a recipe before!
Does using a mallet to pound it to that thickness make it less tender at all?
It means you take a mallet and 'pound' it to 1/2" thickness. You have to be careful not to pound a hole in it because a chicken breast is pretty delicate in places. A better way is to put plastic wrap on top of the chicken breast, then a pie plate, and pound the pie plate, it helps you not pound a hole in it. This is a loud business, LOL.
Once you have done this, one delicious way to cook your chicken is to dip it in flour, then egg, then bread crumbs and fry in 1/4" oil in a pan on medium high until cooked (it cooks quickly b/c it is so thin, like 1-2 min/side). I like to put gravy on mine and serve with mashed potatoes. This is a schnitzel-like recipe. You can also do this with boneless pork chops. It is quite delicious and crispy and crunchy.
